*Spaghetti noodles for 2 people (I measure in my hand...)
*1/2 large can of diced tomatoes, 3/4 drained
*1/2 can of tomato paste
*1 small onion
*2 cloves garlic
*Cheddar cheese, cubed (I like to use a lot, at least 250g for 2 people)
1. Boil spaghetti noodles in salted water, but not completely. They need to be very al dente if you don't want the casserole to turn out mushy.
2. Finely chop onion and garlic cloves. Lightly sauté in olive oil.
3. Combine all ingredients in a casserole dish. Make sure to mix in the tomato paste & tomatos evenly, and spread the cheese cubes out so they won't melt into one giant blob.
4. Cover and bake at 350 degrees for about 20 minutes, or until the noodles' consistency is to your taste.
