homemade chicken stock

Ingredients

- Leftovers from a whole roasted chicken, including bones and skin
- 4 large carrots, peeled and cut in half
- 6-8 branches of celeri (with leaves), washed and cut in half
- 4 medium onions, peeled (whole)
- 8-10 bay leaves


Directions

1. Put everything together in a large stock pot (mine's 8 quarts, I think). Fill with water.
2. Bring to a boil, then reduce heat and simmer for 3-4 hours.
3. Remove everything solid from the pot (don't throw it away!), let cool & refrigerate overnight.
4. Skim fat off the top of stock.
5. Pick any chicken meat off of the bones, and shred into bitesized pieces. Finely chop carrots, celeri (minus leaves) and onions.
6. Add chicken meat, carrots, celeri (minus the leaves) and onions to the stock to make homemade chicken soup, or save stock to use however you want.
